Vegetarian Cuisine Cooking Classes
On a cold evening in January a Plant Based Whole Foods Cooking School was held at the Better Living Center at 531 Forge Mill Road in Morganton, GA. 27 folks braved the weather and came into the warm, welcoming hall. Under the auspices of Adventist Community Service, we were pleased to welcome each attendee. Sherry Harris was busy at the Registration Desk, greeting and getting to know each attendee.
Our busy kitchen crew, Diane, and Judy, made it smooth-running for the busy demonstrations by Kerry and Jan.
Modern science now documents the presence of special properties in plant-based whole foods that can turn off disease-causing genes and turn on genes that promote health. We are so pleased for each one that joined us for a Healthy 2022 with good food choices shared.
Kerry Fannon demonstrated some tasty vegetarian dishes including Potato Corn Chowder, Southwestern “Chickenless” Salad, and a lovely Raspberry Oat Crumble Bar dessert.
Kerry’s demonstrations were entertaining as well as informative. Everyone enjoyed the interesting tidbits of health she shared along with some cute “food” jokes. She explained how to make the Potato Corn Chowder creamy without cream! It was a favorite when the tasting time came.
Kerry shared a bit of her health journey and spoke about her desire to live a more healthful lifestyle and she has found it. She said she’s still a work in progress, but every step toward health is a winner!
Here Jan is explaining Beef-Like Seasoning that she used in the Oat Burgers. Yes, you can make lovely burgers with Oats and Seasonings, bake them in the oven and add a bun and toppings for a great picnic item. We chose to let our guests taste the burgers plain so they could know how delicious and healthy they are. No cholesterol, no animal fat, no disease! Another delish seasoning for Plant Based Whole Foods cooking is Bragg Liquid Aminos, like soy sauce without the added salt. This is one of the secrets to a tasty Oat Burger. Often found at Wal-Mart or online.
The Creamy Waldorf Salad featured Pink Lady apples from R&A Orchards in Ellijay, the Apple Capital of Georgia. Along with some diced celery, date pieces, coarsely chopped walnuts, a little lemon juice to keep the apples from oxidizing (turning brown), we had a crowd-pleasing salad that could double as a dessert. The Whipped Topping was made of presoaked raw cashews, sweetener of your choice, a little salt, vanilla, a secret ingredient (coconut extract) and a can of coconut milk. The crunch of the apples and celery, the sweetness of the dates and Whipped Topping gave the audience “something to chew on” and they seemed to like it, as the bowl was empty after seconds were retrieved.
The Veggie Lentil Soup has basic veggies in it along with a cup of cubed yams, fire-roasted tomato chunks, ginger, garlic, and some wonderful herbs. With a minimal 1 tablespoon of olive oil, the recipe is sure to please family and friends on a cold winter day with a bonus of being low fat, no cholesterol but high in flavor and nutrients. The pot only takes an hour or less to yield this delightful and healthy comfort food. As we look at the beautiful colors in whole foods such as the celery, yams, tomato chunks and aromatic herbs, we see Divine Design and appreciate the blessings of health and a lifestyle that promotes and protects it.

We are so happy to have this beautiful facility for health education as well as outreach on Tuesdays to the surrounding community. A hot meal is served every Tuesday for lunch, food boxes and clothing are distributed to those in need. The kitchen is a dream for cooking the hot meals as well as our Plant Based Whole Foods classes.
We also have a Vegetarian Potluck meal each first Saturday afternoon at the Better Living Center, about 12:30 pm. You are invited to join us!
